I did the layout for the 'Y-axis" and got this as my starting point. I'll have a small triangle of tile at the far right end of this course, but it'll be under the countertop and won't really be seen. I'll also have 3 small strips behind where the refrigerator is going to go, but that can't be helped without a LOT of drop pieces and I just don't have the tile to spare.
